Trader Joe's Gluten Free Oatmeal Cookies

When I think of gluten free, I think bland and dry and tasteless. I actually misread this Trader Joe’s gluten free cookie recipe when I started to make them and didn’t know they were gluten free. Until I got to the part of the recipe calling for peanut butter. Peanut butter? I relooked at the recipe and it dawned on me that these were gluten free! No flour. But they would taste gross. Too late. I was committed to making them and I was pleasantly surprised when they came out of the oven.

For your enjoyment, now presenting Trader Joe’s Oatmeal Gluten Free Cookies which taste good!

Ingredients

¼ cup butter

1 ¼ tsp baking soda

¾ cup sugar

3 cups Trader Joe’s Rolled Oats

¾ cup brown sugar

6 oz chocolate chips

2 eggs

½ cup sunflower seeds or chopped walnuts (optional)

1 tsp vanilla

1 cup peanut butter

 

Instructions

Preheat oven to 350 degrees F. In a large bowl, combine sugar, brown sugar and butter and beat until creamy. Add eggs, vanilla and baking soda and mix well. Add peanut butter and mix. Stir in oats, chocolate chips and nuts. Place each teaspoon full of dough about 2 inches apart o a lightly creased cookie sheet. Bake 10-12 minutes until lightly brown around edges.

Makes approximately 48 cookies (depending on thickness).
