Elderberry Popsicles

And last but not least, here’s a fun recipe kids will love to help soothe the common cold from Dr. Anne Kennard’s Nourish: An Integrative Medicine Cookbook.

Elderberry Popsicles

These are the best for kids with a cold and sore throat.  A gentle boost to the immune system from the elderberry, a natural cough suppressant from the honey, in a frozen form that is tasty to eat and eases a sore throat.  The syrup is delicious on its own as well.  Please note, no honey should be given to a child less than one year of age.

 

Elderberry Syrup:

1 C dried or fresh elderberries

2 C water

1 c raw honey

Squeeze of lemon juice


2 c water or apple juice

8 Popsicle molds

 

Bring elderberries and water to a boil.  Gently bruise the berries, encouraging more dark purple color into the syrup.  Reduce heat and boil down until it has a thick, syrup like consistency.  Strain out elderberries.  Return to heat source and add honey and lemon juice.  Heat and stir until combined.  

For popsicles, add additional water or apple juice.  Stir to combine and place in Popsicle molds.  Freeze.
